From speck to Italian salami to gourmet sausage, CharKuu 102 produces artisanal charcuterie from their heritage breed pigs. Tucked in the boreal forest off Highway 102 in the same woods that the pigs root up, their butcher, Phil Boucher (which aptly translates to “butcher” in French) took The Walleye on a tour of the homestead, specifically where things go from raw to ready.
